Roasted Vegetables
- Firm vegetables: Sweet potatoes, Delicata, Romanesco, Cauliflower, Broccoli, Beets, Turnips, etc
- 2 Tbsp coconut oil, olive oil, or real butter
- 1 tsp sea salt
- Optional seasoning: sweet potatoes and beets pair nicely with 1/2 tsp cinnamon
- Cauliflower, turnips, rutabagas, potatoes and onions pair nicely with 1/2 tsp curry powder
- Butternut squash, cauliflower, and most vegetables pair nicely with 1/2 tsp paprika
- Wash and slice the vegetables into bite sized pieces
- Preheat the oven to 400
- Melt 2 Tbsp of the fat you prefer and rub it over and into the vegetables
- Lay the vegetables in 1 layer and sprinkle with salt and seasoning you like
- Roast for 35-45 minutes, until soft an browned, but not burnt
