Roasted Tomato Salsa
- 5-6 Organic, ripe tomatoes
- 1-4 Organic jalapeƱos or serranos, depending on how hot you like it
- 1 Organic onion, red, white, or yellow
- 1-2 Cloves organic garlic, depending on size
- 1/2 Bunch of washed and dried organic cilantro
- 1/4 tsp sea salt
- Place the tomatoes, peppers, onion and garlic in a cast iron pan
- Cook on med until skins are blistering on all sides
- Transfer items to a blender or food processor
- Blend until you reach your desired consistency
- Add in the cilantro leaves
- Blitz a few times to chop up the greens, but not puree them
- Add 1/4 tsp salt and taste test, add a little more if necessary
