Detox Friendly Muffins
- 2 ripe bananas
- 4 pastured eggs
- 1 tsp vanilla extract
- 1/2 cup coconut flour
- 1/4 tsp sea salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup melted coconut oil (butter would also work)
- 1/2 cup blueberries, raspberries, raisins or nuts
- (I used homemade trail mix of coconut, pumpkin seeds and raisins)
- Mash the bananas into the eggs and blend well
- Add the vanilla extract
- Add all of the dry ingredients
- Bend in the melted coconut oil
- Gently fold in the berries or trail mix
- Bake in a greased muffin tin (I used lard)
- Bake for 30 minutes at 350
- Ours popped out perfect and tasted great just plain
- My son added butter and honey and my daughter liked PB on hers
