A quick and easy option for either a snack, breakfast, or dinner party hors d'oeuvres. These delcious bites are also popular among the children: bonus!
1 farm fresh, crisp cucumber; we like Japanese or persian cukes
1 package wild Alaskan smoked salmon or lox
1 small container Creme Fraiche or plain whole fat greek yoghurt
1 small container fish roe (caviar or the kind that comes on sushi)
Fresh dill
Slice the cucumber into wheels and lay out on a pretty dish
Top each slice with a piece of smoked salmon
Spoon a small dollop of creme fraiche or yoghurt on top
Garnish with a smaller spoonful of fish roe
Chop up a few dill fronds and sprinkle over the cukes and lox
