Stroganoff - Gourmet Hamburger Helper Style
- Grass-fed meat: ground beef, ground turkey, lamb, chicken, pork, whatever you have
- 1 Tbsp lard(bacon grease), duck fat, butter, ghee or extra virgin olive oil
- 1 organic onion: yellow, white or red, shallots would work too
- 1 pint mushrooms, any type will be delicious
- 1/4 green cabbage, I add this for some vegetable fiber, it blends in nicely
- 1 tsp unrefined sea salt and 1/4 tsp ground pepper
- optional seasonings: 1 tsp onion powder, 1 tsp paprika, 1/2 tsp garlic granules, 1/2 tsp cumin
- 1 cup water, wine, or bone broth
- 1 cup whole cream, yogurt, sour cream, or creme fraîche
- 1 package Jovial brown rice egg noodles or 4 servings white or brown rice
- Fresh parsley sprigs or chives make a healthy addition if you have it
- If you are going to serve over rice, begin the rice first, noodles can wait
- Chop up the onion into small pieces and sauté in the fat of choice on med heat
- While cooking, chop up the mushrooms into small pieces and add to onion
- Immediately add ground meat and mix items together, then let brown on med heat
- Season with salt, pepper and any other spices you enjoy from the list
- Keep it simple if you want it to be mild for kids: onion powder and paprika are very mild
- Finely slice the cabbage into small slivers and add once meat is browned
- Add 1 cup wine, water, or broth
- Let the mixture simmer on low while you boil the rice noodles, about 15 minutes
- Turn off the heat on the stroganoff and mix in the creamy dairy of choice
- Taste for seasoning, add some sea salt to taste if necessary
- Mix in the noodles to serve as a one pot, or serve over rice like lava in a volcano
- If your family enjoys fresh herbs, sprinkle with some parsley or chives
