Smoked Fish Pasta
- 1 box Jovial brown rice spaghetti noodles or your equivalent
- 1 6oz piece of smoked fish or 1 can of tuna
- Fresh "salsa" vegetables to chop: shishito peppers, green onion, garlic, tomato, avocado, tomatillos, jalapeƱos, and cilantro
- 1 Lime
- A few glugs of extra virgin olive oil
- Sea salt and fresh black pepper
- While the noodles are boiling per package instructions...
- Dice up the vegetables you enjoy from the list in small bite size pieces
- Toss them in a large bowl
- Drain the pasta and place it over the veggies to steam the onions, garlic, and peppers
- Tear up the smoked fish into bite size pieces and add that to the bowl
- Squeeze the lime and pour over the olive oil
- Season with sea salt and pepper
- Toss everything well and serve
- This dish is also delicious as a cold pasta the next day
