1 pastured chicken 3-5 pounds
1 handful extra virgin olive oil
sea salt and fresh ground pepper
1/2 lemon or onion to stuff the bird (or both)
Rub chicken with olive oil inside and out
Sprinkle with sea salt and pepper
Stuff with lemon, onion, or both
Bake for 75 minutes if closer to 3 pounds and 1.5 hours if closer to 5 pounds at 350º
Allow chicken to rest for at least 10 min before carving and losing all of the juices
Pull off all of the meat after dinner and save the bones in a ziplock bag in the freezer until you’re ready to make broth
