Raw Food Ceviche
- 1 lb fresh fish: Mahi Mahi, halibut, red snapper, tuna, or sea bass are nice
- 4-5 limes, 1 lemon or orange could be used for variety
- 1 large chopped tomato or a bunch of cherry tomatoes
- 1 cucumber chopped
- 2 jalapeños or serranos diced
- 2 Tbsp fresh cilantro chopped
- 1 avocado
- 1 Tbsp extra virgin olive oil
- splash of rice wine vinegar
- 1/4 tsp sea salt and fresh pepper to taste
- Chop up the fish into bit size pieces and cover with lime juice
- Deseed and dice jalapeño, add to \"cook\" in the citric acid
- Leave fish overnight or for at least 4 hours in the fridge to \"cook\"
- Drain most of the lime juice and add chopped veggies
- You can be creative here: mangoes are delicious, omit tomatoes if you do not like,
- green onions are nice as is garlic, etc.
- Sprinkle with sea salt and pepper, toss with olive oil and splash with vinegar
- Refrigerate again for 1 hour if you have the time to spare for the flavors to blend
- Fill up an avocado, fry up some plantain chips, or potato chips in bacon fat or coconut oil,
- try rice chips, fry up some corn tortillas till super crispy,
- or enjoy your raw food ceviche with a spoon!!!
