Keep it light, simple, and garden fresh for the best flavored skewers. If you don't have skewers, try using rosemary stems with the leaves pulled off. Soak in water first so they don't catch on fire.
1 lb flank steak or chicken hearts
1 pint cherry tomates
1 red onion
1 pint mushrooms
Your favorite veggies: zucchini, eggplant, bell peppers
1 pineapple
1 orange
1 Tbsp Tamari or coconut aminos
2 Tbsp Extra virgin olive oil
Sea salt and pepper
Fresh herbs: parsley, cilantro, basil, or chives
Mix 2 Tbsp olive oil and 1 Tbsp Tamari or coconut aminos
Add fresh chopped herbs, 1/2 tsp sea salt and 1/4tsp pepper
Chop the flank steak against the grain and marinade in the sauce
Chop up veggies to fit on a skewer
Layer meat, veggies, and pineapple on the skewers
Pour the remaining marinade over them
Grill or broil under high heat about 5 minutes on each side
Finish with a drizzle of an orange and some fresh chopped herbs
