Plantains with Mango Salsa
- 2-3 Large plantains beginning to yellow with black spots
- 1 Tbsp olive oil, coconut oil, or melted butter
- 1/4 cup coconut oil, lard, duck fat, or ghee
- 2 Mangoes
- 1/2 bunch cilantro
- 1 Lime
- 1 Jalapeño
- 1 Cucumber
- 1/4 tsp sea salt for the salsa
- sea salt to sprinkle on the plantains
- Peel and slice the plantains into 1/4 inch wheels
- Rub with 1 Tbsp oil and place in 1 layer on a cookie sheet
- Bake at 400 for 15 minutes
- Slice 2 mangos into small chunks and toss into a bowl
- Add 1 cucumber, diced small
- Add 1 jalapeño diced, without seeds *optional add seeds for intense heat
- Chop 1/2 bunch of cilantro leaves into fine pieces
- Squeeze 1 lime all over the salsa
- Sprinkle with sea salt and mix gently
- Remove the plantains on a cutting board and smash them with a spatula
- (Optional flash fry, the plantains could be eaten now with a sprinkle of salt or...)
- Heat up 1/4 cup fat until hot and fry the plantains 1-2 min on each side
- Do not let them burn, you must be at the stove at all times to fry
- Sprinkle with sea salt as soon as removed from the fat
