This is my favorite pic nic food that reminds me of the south of France. It can also be served salad bar style to allow for a variety of diet requirements and all ingredients are optional.
The highest grade tuna in olive oil you can find.
Hard boiled eggs (directions included)
Green beans
A few Potatoes
Cherry tomatoes or favorite sliced tomatoes
1/2 red onion
1 handful Nicoise style olives
A few capers
1 head romaine lettuce
Drizzle of an amazing olive oil
Splash of your favorite vinegar
Sea salt and fresh ground pepper to taste
Hard boil the eggs by bringing them covered in water to a boil, turn off the heat, cover, and wait 8-10 min
Drain the water and cover in cold water until eggs are cool to the touch, then peel them
Boil the potatoes for 10 minutes or until soft depending on size, check with a fork
Boil the green beans for 5-7 minutes until soft and blanch in ice water to retain color and freshness
Build this salad to your liking starting with the lettuce
Layer on tuna, boiled potatoes, cooked green beans, sliced tomatoes, slivered red onion, and olives
Top with capers and drizzle on olive oil and vinegar before serving
Lightly salt to make the flavors pop and add fresh pepper to taste
