My Meatloaf
- 1 lb ground grass fed beef
- 1-2 non GMO chicken livers
- 1 clove organic garlic
- 1 small organic chopped onion
- 1 organic celery stalk
- 1 organic carrot
- 1 pastured egg
- 1/2 tsp oregano
- 1/2 tsp paprika
- 1 tsp sea salt
- 2 strips nitrite free bacon
- *optional 1/4 cup coconut flour or chickpea flour
- Run the carrot, onion, and celery through the food processor to chop.
- Add livers, ground beef, garlic clove and egg.
- Pulse until combined, (add a bit of coconut or chickpea flour to soak up liquid)
- Season with paprika, oregano, salt or whatever you like.
- Place the mixture into a bread pan.
- Layer 2 strips of bacon if you like over the top.
- Bake for 1 hour at 350
- Serve it sliced like a hamburger for the kids
- I prefer this dish served with sautéed greens or a green salad
