I Heart Stew
- 1 Grass fed beef heart from a farmers market
- 4 Crisp organic carrots and celery stalks
- 1 Organic Yellow or white onion chopped
- 3-4 Organic Potatoes depending on size chopped into small cubes
- Tie up any herbs you like in cooking twine: thyme, rosemary, sage, bay leaf
- Enough filtered spring water to cover the contents and fill the slow cooker
- 1 cup red wine
- Sea salt and fresh ground pepper
- Fresh organic parsley
- Chop up the beef heart into stew sized pieces and toss into slow cooker
- Chop up onions, carrots, celery, and potatoes and add to pot
- Pour 1 cup red wine and fill the rest of the pot with water
- Add a tied up bouquet garni of fresh herbs to flavor your stew
- Cover and cook on low for 8 hours
- Add sea salt and pepper to taste at the end
- Serve with fresh parsley chopped over the top
