Fish and Chips
- 2 pounds firm fleshed white fish like halibut, cod, or haddock
- 1 cup almond flour or tapioca flour
- 1/2 cup coconut milk, kombucha, whole fat milk, or even selzer water
- 2 eggs
- 1 tsp sea salt
- *optional spices: 1/2 tsp onion powder, 1/2 tsp paprika, 1/2 tsp granulated garlic
- 3-4 Tbsp fresh lard (bacon grease) or coconut oil
- 3 potatoes, 3 sweet potatoes, or 1 butternut squash
- 2 Tbsp extra virgin olive oil
- 1 tsp sea salt
- *optional spices for fries: same as above for fish
- Set oven for 400º
- Wash and chop potatoes or butternut into long fries
- Rub with extra virgin olive oil and season generously with salt and spices of choice
- Bake for 45 minutes
- Mix almond flour, eggs, liquid of choice, sea salt and spices of choice
- Add more liquid if batter is too thick by the Tbsp until desired consistency
- Heat up lard or coconut oil to med high heat in a shallow frying pan
- Dredge fish into the mixture and lay into the pan
- Do not move fish, allow it to crisp on the bottom to a golden brown, about 4 minutes
- Flip the fish and wait 2 minutes
- Place the fish in the oven with the fries and bake for 8 minutes
- Serve with lots of fresh lemon slices and maybe a drizzle of vinegar
