Easy One Pot Chicken Meal
- 4-8 drumsticks or chicken thighs on the bone
- any combination of vegetables: potatoes, peppers, onions, beets, brussel sprouts, sweet potato, turnips, broccoli, cauliflower, or asparagus
- Glaze #1:
- 1 orange
- 2-3 Tbsp Tamari (wheat free soy sauce)
- 2 Tbsp coconut oil
- 1 Tbsp Toasted Sesame Seed Oil
- Sea salt and pepper to taste
- Glaze #2
- 2-3 Tbsp olive oil
- 1 Tbsp Balsamic Vinegar
- 1 tsp dried herb seasoning like Herbs de Provence or dried basil
- Sea salt and pepper to taste
- Preheat the oven to 450
- Place coconut oil on the cookie sheet and in the oven to melt
- Cut up vegetables of choice
- Pull out cookie sheet and rub vegetables and drumsticks in the coconut oil
- If using olive oil simply rub on the olive oil now
- Drizzle an orange and Tamari over or balsamic vinegar depending on Glaze choice
- Sprinkle with seasoning, salt and pepper
- Roast for 35 minutes in the oven
- Drizzle toasted sesame oil once out of the oven if using Glaze #1
- Serve in a pretty dish and let the family choose their vegetable sides
