Chicken Stroganoff
- 1 package organic boneless chicken thighs
- 1 pint mushrooms any type
- 1 onion or shallot
- 2 cloves garlic
- 1 Tbsp bacon fat, butter or ghee
- 1 cup bone broth or water
- 1/2 cup heavy cream, sour cream or creme fraiche
- 1 tsp onion powder
- 1/2 tsp garlic granules
- 1/4 tsp dry mustard powder
- 1 tsp unrefined sea salt and fresh ground pepper to taste
- Fresh parsley
- Rice or Jovial brand brown rice egg noodles
- Saute chopped onion or shallot in fat of choice for 3 min
- Chop mushrooms into bite sized pieces and add for 3 more min
- Chop chicken into bite size pieces and add until cooked through
- Sprinkle on all of the spices and add garlic cloves but do not burn
- Pour broth over mixture and scrape from bottom of pan
- Let the mixture simmer gently for 8 minutes
- Turn off heat and stir in the cream
- Garnish with fresh parsley
- Serve over rice or mix in rice noodles
