A Happy Meal
- For the Chicken Nuggets
- organic chicken breasts or thighs cut like tenders, 3-4 per person
- 1/2 cup whole milk or cream
- 1 cup almond flour
- 1 tsp unrefined sea salt
- 1 tsp paprika
- 1 tsp onion powder
- 4 Tbsp fresh bacon lard or coconut oil
- For the Fries
- 1 butternut squash peeled and cut like french fries
- 1 Tbsp coconut oil or butter melted
- 1/2 tsp paprika
- 1/2 tsp unrefined sea salt
- For the Cream Soda
- 1 glass sparkling mineral water
- 2 Tbsp whole milk or cream
- 1 tsp vanilla extract
- 1 Tbsp maple syrup
- Begin with the butternut squash peeling and cutting into matchsticks
- Melt the butter or coconut on a cookie sheet and then roll the fries in the fat
- Sprinkle with paprika and salt
- Place in a 400 degree oven for 45 minutes
- Heat the lard or coconut oil in a pan to med high heat
- Cut the chicken into tenders and cover with milk or cream in a bowl
- Mix the almond flour and the spices in another shallow bowl
- Roll each tender into the flour and fry in the lard or coconut oil
- Flip until crispy on all sides and place on a paper towel to dry
- Serve the fries and chicken tenders with catsup for dipping
- Add a steamed vegetable like broccoli to round out the meal
- For the soda, fill a fancy glass with ice and sparkling water
- *Optional: maple syrup if they like it very sweet.
