Pumpkin Pie From Scratch
- 1 1/2 cups pumpkin or any winter squash baked for an hour
- 3 pastured eggs
- 1/2 cup pure coconut milk or heavy cream (both are delicious)
- 1/2 cup maple syrup
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp sea salt
- 1/8 tsp ground cloves
- 1/8 tsp nutmeg
- 1tsp vanilla extract
- *seasonings are always optional, use what you love
- Add all of the ingredients above into a food processor and blend until smooth
- A handheld mixer or stand up mixer would also work on med/high until smooth
- Pour into crust of choice, we love a gluten free almond flour crust
- Bake at 350° for about 1 hour to 1.5 hours until the center is set
- Let it cool completely for the flavors to blend together
- Top with homemade whipped cream for some crazy deliciousness!
