Grain Free Guilt Free Chocolate Chip Cookies
- 1/4 cup coconut oil firm, at room temperature or 1/4 cup real butter, not melted
- 1 room temperature pastured egg
- 1/4 cup coconut sugar
- 2 Tbsp raw honey
- 1 overflowing teaspoon of vanilla extract
- 1 1/2 cup almond flour or almond meal
- 2 Tbsp coconut flour
- 1/2 tsp sea salt if using unsalted butter, 1/4 tsp if using salted butter
- 1/2 tsp baking soda
- 1/3 cup unsweetened dark chocolate chips
- Blend the coconut oil or butter and the egg thoroughly
- Add in coconut sugar, honey and vanilla extract
- Mix in the dry ingredients: flours, salt, and baking soda
- Stir in the chocolate chips by hand.
- Set oven to 350ºF and cover a cookie sheet with parchment or a silpat liner
- Spoon out a scoop of cookie mix and flatten slightly with the palm of your hand
- Bake for 10 minutes until slightly brown and you can smell them in your kitchen.
