Simple Salad Dressing
- 1 spoon of dijon mustard
- 1 spoon of real grade B maple syrup
- 2 spoons of balsamic vinegar or any other vinegar
- 3 spoons of extra virgin olive oil, walnut oil, or avocado oil
- sea salt and fresh ground pepper
- Rub equal parts (spicy) dijon and (sweet) maple syrup into the salad bowl.
- Add in 2 times as much (sour) balsamic vinegar.
- Slowly drizzle 3 spoons of (bitter) olive oil until the dressing emulsifies or thickens.
- At this point taste for balance of flavor and add salt or pepper
- Add any of the following to taste: fresh herbs, blue cheese, shallot, or garlic
