You could call this a lazy omelet; it's my favorite egg dish in the morning to incorporate a lot of veggies. Just think of your favorite omelet combos and clean out the fridge with as many different veggies and herbs as you can.
Handful of greens: kale, spinach, arugula, Swiss chard, or collard greens.
Some type of onion, shallot, green onion, or leek
1 Tbsp healthy fat like butter, avocado oil, coconut oil, or ghee
A veggie, herb, or mushroom or all: zucchini, tomato, mushrooms, or broccoli
Any type of ham, bacon, sausage, or leftover meat from dinner
4-6 eggs depending on size of pan and how many are eating
Sea salt and fresh herbs such as dill, parsley, or chives
Heat up a shallow pan to medium low heat and add 1 Tbsp fat of choice to melt and coat the bottom of the pan
Chop up onions, hard veggies, mushrooms, greens, and ham or meat into small pieces
When pan is hot add onion and cook 3-5 min until soft
Add hard veggies and or mushrooms and cook another 3-5 min until soft
Add any type of ham and greens and season everything with about 1/4 tsp of salt
Crack eggs into a bowl and stir with a pinch of salt before adding over the veggie mixture
Turn the heat down low and cooke until the bubbles come through and the top is nearly cooked
Place entire pan under the broiler (not too close) for 2-3 minutes until the top is cooked
