Greens, Eggs, and Ham

An ode to Dr. Seuss and one of my favorite breakfast dishes.

1 handful chopped greens: spinach, kale, collards, Swiss chard, or arugula
1 slice very good quality ham
1-2 eggs
1 shallot, onion, or green onion
2 tsp butter or olive oil
Heat up a skillet to low-med and add fat
Start with some type of chopped onion if you have it and cook for 3 min
Add chopped greens for another 3 minutes
Add chopped ham for 1 minute to heat up
Push everything to the side of the pan and a little butter to the space
Fry egg in the same pan so you have less dishes to wash. ;)
Season everything with sea salt and enjoy!
