2 and 1/4 cups gluten free flour
2 Tbsp baking powder
1/2 tsp baking soda
1 tsp sea salt
1 stick of butter or 1/2 cup bacon fat (yes, this is a healthy fat)
3/4 cup real buttermilk, milk kefir, or whole fat milk (with a tsp of lemon in it to sour it)
2 eggs
Mix the dry ingredients
Cut the cold butter into small chunks and rub into the flour with your hands
Mix until it looks like small pebbles and make a well in the middle
Whisk the wet ingredients together and pour into the well
Stir the dough until it is sticky
Heat the oven to 450º
Roll small portions in your hands and drop onto a cookie sheet in small round blobs
Bake for 15-20 minutes depending on your oven, do NOT let burn!
Serve with extra butter and gravy for double healthy fats
