Date Pecan Balls
- 1 cup pecans (walnuts would work too)
- 3/4 cup dried blueberries, cherries, mulberries, or goji berries
- 1/4 cup fresh ground peanut butter, almond butter or tahini
- 10 Medjool dates (remove the pits)
- 1 Tbsp unsweetened cacao powder
- 1/2 cup unsweetened coconut chips
- 1/4 tsp himalayan sea salt
- 1 tsp vanilla extract
- Add everything to a food processor or blender
- Pulse until everything is blended, crumbly, and sticky
- Roll small amounts into little balls
- Throw them in the fridge for an hour and voila!
